Carolina Crossroads Restaurant Hosts Special February 27 Winter Seafood Jubilee Event
CHAPEL HILL, N.C. (February 2014) – Carolina Crossroads Restaurant at The Carolina Inn is one of three Triangle restaurants participating in the inaugural Winter Seafood Jubilee, a series of North Carolina winter seafood-centric events and promotions taking place across region this month.
Locals Seafood is working with area restaurants and social media foodie gurus to educated the public about the seasonality of seafood and introduce the public to trending statewide seafood items such as dogfish, ribbonfish, mullet and more.
Carolina Crossroads Restaurant, managed by Destination Hotels & Resorts, specializes in cuisine that Executive Chef James Clark describes as “Contemporary Southern” committed to a strong emphasis on local fresh sustainable ingredients. And Clark is a renowned seafood aficionado.
On Thursday, February 27 at 6:00 pm, Carolina Crossroads invites guests to attend a cooking class in the Piedmont Room highlighting Chef Clark’s techniques preparing three types of winter seafood (Cold Smoked Sunburst Trout, “Full” Steamed Clams and Butter Basted Triggerfish). The event features the beers of Durham’s Fullsteam Brewery, with founder Sean Lilly Wilson on hand to speak to the importance of seasonal, local sourcing.
For the first hour, guests will enjoy Pickled Shrimp & Yucca, Flounder Brandade Croquette, Crispy Oysters with Country Ham Leek Reduction and Sturgeon Poached in Duck Fat Olive Tapenade.
Then at 7:00 pm, Chef Clark will provide a three-part cooking demonstration featuring Cold Smoked Sunburst Trout with Roasted Beets, North Carolina Apples, Frisse and Horseradish Vinaigrette; “Full” Steamed Clams served with Cilantro, Anaheim Chilies, Spanish Chorizo, Candied Orange; and Butter Basted Triggerfish accompanied by Sunchoke Puree, Roasted Radishes & Squash and Arugula Pesto.
Guests will also indulge in Warm Cinnamon Sugar Doughnuts served with Bourbon Anglaise, Caramel Dulcey Chocolate Lollipops and Coconut Passion Ice Cream with Ginger Sandwiches.

The Winter Seafood Jubilee kicks off online with the “3 on 3 at the Winter Seafood Jubilee,” which takes place during the first three weeks of February. Three social media foodie gurus are participating: Kim Alexander (@trianglelocalista), Kristen Baughman (@knbaughman), and Johanna Kramer (@durhamfoodie). Each guru is responsible for one week, when they will be given three different species of winter seafood. They will prepare each product three different ways, and chronicle their culinary journey via three social media platforms of their choosing.
