Decadent Chocolate Cake Recipe at The Carolina Inn

Any time is a great time to prepare a six layer chocolate cake especially for Valentine’s Day in Chapel Hill, NC. Don't be fooled...not all chocolate cake recipes are created equal. Executive Pastry Chef Sara Thomas’ version is pure delight – flavorful and moist – each layer is filled with a silky chocolate frosting, and topped with dark chocolate ganache. Gather your ingredients now and prepare this decadent cake today! Chocolate Fudge Cake Recipe - Makes Two 10" Cakes Cake Flour 9 3/4 oz. Sugar 13 ½ oz. Cocoa Powder 2 ¼ oz. Water 7 oz. Vegetable Oil 3 oz. Butter –  3 ¾ oz. Eggs 3 oz. Buttermilk 3 ¾ oz. Vanilla Extract to Taste Baking Soda .3 oz. Directions Bring water, vegetable oil, and butter to a boil. In a mixing bowl with a paddle attachment, combine all the dry ingredients. Add the boiled hot mixture, and beat for 5 minutes on 2nd or low speed. Scrape down the bowl, and then add the eggs, vanilla, and buttermilk. Add baking soda. Bake at 350° in the oven for 30 - 35 minutes. Chocolate Fudge Icing Recipe - Makes 3 lb. 3 oz. Powdered Sugar 1 lb. 8oz. Salt .25 oz.   Cocoa Powder 2 oz. Butter 12 oz. Melted Bittersweet Chocolate 6 oz.   Dark Corn Syrup 1.5 oz.   Vanilla Extract 1 oz.   Heavy Cream 4 oz.   Directions Sift all dry ingredients. Cream the butter and the dry ingredients on low speed until smooth. Add the melted chocolate, corn syrup and vanilla. Add the heavy cream. Chocolate Ganache Recipe - Makes Three Cups Heavy Cream 10 oz.   Milk 2 oz.    Semi-Sweet Chocolate 13 oz. Directions     In a sauce pot, bring heavy cream and milk to a boil. Pour mixture over the chocolate. Use a hand blender to blend everything together.  Place in a pan and cover with plastic wrap. Assembling Cake Cut cakes into four. You will only use a total of six layers each ¼” thick. One full 10” cake and a half of the second cake will be used. Ice each layer with 10 oz. of icing.  Ice the outer portion of the cake twice, and place in the freezer for 15 minutes. Place on a wire rack and pour ganache on top. Garnish with a truffle.  Cut a slice of cake, pour your favorite cup of coffee and enjoy!

Thanksgiving Recipes in Chapel Hill, NC - Muscovy Duck

The Carolina Inn's Executive Chef James Clark recommends modifying your Thanksgiving menu this year by including a Cardamom Lacquered Muscovy Duck. This delicious dish includes cardamom which gives great floral aroma and flavor to the duck. This is a wonderful winter recipe to prepare this holiday season. Any side will accompany this dish, but Chef James' favorites are wild rice and roasted winter squash. This North Carolina recipe works very well with a rich California Cabernet such as the most obvious Duckhorn or if you prefer something lighter, a Red Meritage such as Franciscan Magnificat will pair perfectly, too. The recipe has many steps. However, once you read through it, you’ll realized the dish is simple to prepare. This recipe will work best with store bought ducks and not with wild ducks because they do not have the amount of fat on the bird that makes this recipe a success. Step 1 2 washed and cleaned whole ducks 2 lb Salt Take the ducks and coat them on the outside and inside with salt and let them sit at room temperature for at least 3 hours. For best results, hang the duck or set the on a rack with a drip pan underneath to allow the moister to come out. After three hours, wash the salt off the ducks in cold water. Step 2 12 Cardamom Seeds 1 tsp. Whole Cloves 1 Tbs. Whole Allspice 3 Bay Leaves 2 Small Honey Bears 2 Gallons of Water While the ducks are sitting, bring all of the above ingredients to a slow simmer. Allow to cook infusing the cardamom flavor into the liquid. Once the ducks have been rinsed, submerge them into simmering liquid for 12 minutes. After 12 minutes, carefully remove them from the pot and place ducks on a rack so they can continue draining. Once they have finished draining, remove the excess liquid from the bottom of the pan and have your oven pre-heated to 475°. Place the ducks in the oven and cook for 17 minutes for medium rare and 20 minutes for medium well to well.  After the ducks have cooked, pull them out of the oven and allow them to cool slightly before you slice into them. Enjoy!

Chilled Asparagus Salad in the Best Chapel Hill Restaurant

Kickoff the summer season with a tasty, healthy salad. Executive Chef James Clark, of Carolina Crossroads Restaurant, makes this delightful chilled asparagus salad with baby frisée, spring onions, quail eggs, garden-fresh herbs and homemade "jar dressing." Each bite brings out a different combination of ingredients. So, get to your local farmers’ market and handpick local produce to create this delicious and satisfying salad. It’s the perfect accompaniment to any summer supper. Ingredients 12 Jumbo Asparagus 2 Heads Baby Frisee 12 Spring Onions 4 Tbs. Sugar 1 C. Cider Vinegar 2 Tbs. Pickling Spice 2 Sprigs of Thyme 4 Quail Eggs 2 Qt. & 2 C. Water 3 Tbs. Salt 1 Tbs. Olive Oil Salt and Freshly Ground Pepper to Taste Directions Put 2 qts. of water on the stove and add the 3 tbs. of salt and bring to a simmer. In a separate pot, add the sugar, vinegar, thyme and pickling spice and bring to a simmer.  While both pots are heating both up, trim Asparagus and peel way the woodsy skin which is about mid may down the stalk, rinse, and set aside. Next, take the Ramps and trim and discard the root. Then separate the bulbs from the green leaves and rinse. Keep separate and set aside.  Once your salted water is simmering (have an ice bath ready), drop in the Ramp bulbs. Poach for 2 minutes. Pull out of the water allow to drain and place them in a small no reactive bowl and pour the vinegar pickling liquid over the Ramp bulbs. Immediately cover and place into the refrigerator. This can be done several days in advance. Next simmer Asparagus for 2 minutes. Pull out and submerge in ice bath. Do not oversoak. Once cooled place asparagus on a towel to dry. Repeat this process with the Ramp leaves and set aside. You will be adding the leaves to the dressing.  Trim the dark green off the Frisee down to where it turns light green to white, cut the root end, then wash and dry.  To cook the eggs, heat olive oil in a small nonstick pan. Once hot, gently crack the quail egg and allow to cook until the egg white has cooked through. Serve sunnyside up. Jar Dressing 1 Tbs. Tarragon ~ Sliced 1 Tbs. Basil ~ Sliced 1 Tbs. Flat Leaf Parsley 1 Shallot ~ Diced 2 Cloves Garlic ~ Minced 2 Scallions ~ Grilled & Minced 1 Tbs. Dijon Mustard 1 Tbs. Capers ~ Chopped ½ Red Pepper ~ Diced Small ¼ C. Sherry Vinegar 1 ¼ C. of Extra Virgin Olive Oil Salt and Freshly Ground Pepper to Taste Place everything in a pint size jar, and shake vigorously. Dressing lasts up to a week in the refrigerator. Bon Appétit!

North Carolina Moonshine Tasting in Chapel Hill

This past Saturday, 6/14th we held our first-ever moonshine tasting. Well received by the Chapel Hill, N.C. community, 65 attendees rallied on the Front Porch of The Carolina Inn. The day was ideal for this sold out event. The weather was absolutely perfect – gentle breeze, lots of shade, and stunning Carolina blue skies. With bluegrass music playing in the background, you could hear the sounds of mason jars (filled with moonshine of course) clinking as guests made their toasts. Made available to the attendees included a variety of moonshine. TOPO Organic Carolina Moonshine, Troy & Sons Moonshine, Broadslab Legacy Shine, Junior Johnson’s Midnight Moon, Howling Moon Moonshine and Catdaddy Carolina Moonshine were all available for sampling. Also served was Crossroads’ delicious culinary delights paired perfectly with the North Carolinian moonshine that was offered. Guests enjoyed Southern favorites such as Seared Pork Belly, BBQ Beef Short Rib on a Biscuit, and Braised Pork Cheeks just to name a few. Our celebrity guest, Moonshiner Wayne, from the Discovery Channel’s TV Show “Moonshiners” was on-site meeting his fans, and answering their questions. Also known as “Hill Billy,” Wayne brought his very own still and an oversized backdrop of his still located in the backwoods of North Carolina. Guests had big smiles as they posed for pictures in front of it with the Moonshiner. Even the Chapel Hill Fire Department made a surprise visit to the tasting as they, too, wanted their picture taken with Wayne. Here’s to another fun and unique event held in downtown Chapel Hill at The Carolina Inn. Cheers!
